The goal of this proposed project is to leverage the relationships built and lessons learned during our NSF-CIVIC Stage 2 grant to undertake a collaborative research-centered, socio-technical approach to quantify food deserts in the Houston area, create a blockchain-based marketplace to improve food security, provide culturally appropriate nutritious recipes and promotional methods to food charity organizations, and develop educational materials for community health workers, clients, and children. Our multi-method approach addresses four overall research questions: (1) How can we redefine, model, and predict food deserts? (2) How can we minimize food waste? (3) How can we impact nutrition literacy? (4) How can we measure the health effects of having access to culturally-appropriate nutritious food? SAMs 1.1.1
